Introducing our Fabulous Flash-Fried Brussels Sprouts

These aren't the Brussels sprouts your parents tried to make you eat. Our Flash-Fried Brussels put a new spin on these nutritious greens that is sure to please your taste buds like never before.

Our Chef, Matthew Horton, explains his creative process for developing this creative, culinary concoction.

“I love Brussels sprouts and I’ve been developing this recipe for many years. I was determined to add them to the Rasta Taco menu. However, I wanted these to be unlike any other Brussels dish that our guests have tasted. I knew I wanted them to be crunchy, tangy, sweet, bitter, gluten-free, vegan, easy to make and most importantly … delicious! 

“The Brussels have to be prepared correctly in order for the spices to work their wonders. First, I par blanch the sprouts to soften them up so the cornstarch will easily stick to them. The cornstarch will give them the crunch factor that I desire. I then toss them in a mixture of fresh squeezed lemon juice, mint and olive oil. 

To achieve more depth in the flavor I then add toasted pumpkin seeds - known as pepitas - which are influential in Mexican Cuisine. To add some Caribbean flavor to the mix, I throw in some delicious dried mangos. Lastly, I drizzle the Brussels with a balsamic agave reduction for a splash of sweet and tangy flavor. 

This vegan creation possesses a multitude of complex flavors and textures that appeal to the senses. It is the number one selling appetizer on our menu and encompasses Mexican, American and Caribbean cuisine.
